how to make delicious rice
« on: September 02, 2011, 11:31:00 PM »
ingredients:

rice (I like white rice because it tastes good)
1 oninon
some garlic
I like to add in a stick of celery

a big piece of ginger
a few cinnamon sticks
tumeric
cumin
I have some tasty ethiopian spices ive been adding in too

water
olive oil

step 1: ginger /cinnamon tea:

put sliced fresh ginger and cinnamon sticks in water and begin simmering. You can simmer them and make the tea as concentrated as you want, but the 15 minutes or so it takes to get the rest ready is usually enough.

step 2: sauteeing veggies

slice the veggies and put them into a bigger pot with copious amounts of olive oil. olive oil is quite healthy, makes food cook better, and this is making many servings of food so dump a good bit in. Put this on med heat for about 10 minutes.

step 3: roasting the rice

add the rice to the veggies (the tea is still brewing) and let it brown a little bit. It will start to crisp at the bottom so stir it around once in a while.

Step 4: combining

Add the tea to the rice, saving the ginger and cinnamon for next time in a jar in the fridge. The ginger/cinnamon is still good for many teas... its pretty good to drink even if you dont want to make rice. Add tumeric and cumin or any other spices you might like and let the rice finish.

The last pic is said rice served with fried plantains, avo, beans and corn, tortillas, and garnished with diced chillis. mmmmm

enjoy

sure saffron is a great addition! Practically any veggies or spices can be added/substituted to this formula. The idea is to make a big pot of very tasty and healthy rice that can be reheated and added to lots of things. It's also very cheap to make. Frying some tofu, eggs, plantains, eggplant, whatever, and then adding in leftover rice and panfrying the whole mess makes a very quick, tasty, healthy and cheap meal.
